Summer salads
Its summertime which means it’s time for fresh fruits and vegetables from the garden!
There are plenty of options out there to use as dressings or dips, but some of them contain artificial colors, flavors, and more sugar and salt than is really necessary. Why not try to make your own? Here are a few simple ideas:
Tzatziki dip
1 (32 ounce) container plain low-fat yogurt
1/2 English cucumber with peel, grated
1 clove garlic, pressed
2 tablespoons fresh lemon juice (optional)
2 tablespoons extra-virgin olive oil
3 tablespoons chopped fresh dill
Add all ingredients to mixing bowl and refrigerate 8 hours before serving.
Enjoy with vegetables or with your favorite salad greens and chicken.
Yogurt dip
16 ounces plain yogurt
1 packet Splenda, stevia or Truvia
1 teaspoon cinnamon or cocoa powder
1 teaspoon vanilla
Mix all ingredients together. Refrigerate 1 hour before serving.
Enjoy with fruit.
Easy salad dressing
¼ cup tarragon vinegar
½ cup canola oil
1 packet Splenda, stevia or Truvia
Mix together in dressing bottle. Shake to combine.
